This is a delicious, fluffy cake with incredible pineapple flavor and moist texture.

Cream the margarine with the sugar until the mixture is pale and fluffy.

Add the eggs and vanilla extract, mixing until fully incorporated.

Add the flour, alternating with the pineapple juice. Repeat this step twice. Add the baking powder.

In a pot or cake pan, combine the water, sugar, and pineapple slices. After 10 minutes, remove the pineapple slices and let the syrup continue to cook.

Place the pineapple slices at the bottom of the cake pans, pour in enough syrup, then add the batter. (Use 3 cake pans, each 5 1/2 inches in diameter.)

Bake for 50 minutes at 350°F (180°C) and unmold while hot.
