This is a simple but tasty recipe which I have prepared to celebrate makar Sankranti.

Remove the skin of sweet potatoes. Grate it coarsely.

In a nonstick pan, add ghee and allow it to melt. Add grated sweet potato into the hot ghee and saute for 2-3 minutes. When it is light brown in color, remove the pan from the fire. Collect the sweet potatoes in a plate to make it cool.

In another pan, add milk and allow it to boil. Cook for at least 8-10 minutes under low flame with constant stirring till the volume reduces to half. During this time, add sugar and crushed cardamom into the milk.

Add sweet potato into the hot milk. Boil milk with grated sweet potato for some more time till the consistency becomes thick.

Remove the kheer from the pan and collect in a serving bowl. Garnish it with grated date palm jaggery.
