Firstly, in a pan dry roast all the spices listed for masala on low flame for 2 minutes.

Blend to fine powder and kolhapuri masala is ready. Keep aside.

Heat oil and fry paneer cubes. Keep aside.

In the same oil, add bay leaf, onion, ginger garlic paste and saute well.

Add tomato and cook well. Mash the tomatoes well with the help of potato masher.

Add in prepared kolhapuri masala, add haldi and salt. Saute on low flame till oil separates from masala.

Now add in water and mix well adjusting consistency.

Add in fried paneer.

Cover and simmer for 10-15 minutes

Now add crushed kasuri methi and mix well.

Finally, serve paneer kolhapuri masala with tandoori roti or garlic naan.
