Fluffy Eggs and Bacon

Cut the bacon into small strips.

Using half the butter, fry the bacon until fully cooked then set aside.

Seperate the egg yolk from the white putting the white into a large bowl and saving the yolk for later.

Whisk the egg whites until soft peaks appear.

Add salt to the egg yoke and whisk with a fork.

Add the yolk to the egg white and fold in gently.

Fold the bacon into the eggs.

In a large frying pan (I often use the same one as the bacon) add the eggs and spread evenly. Cover and leave for 5 minutes or until cooked.

Fold in half and serve with a sprinkle of black pepper.
