I used to slowly simmer the beans in a sauce pan, but now I have a pressure cooker and can make them quickly.

Boil the dried adzuki beans in a generous amount of hot water, then drain.

Put the beans and water in a pressure cooker, then heat on high. When the pressure gauge indicates full pressure, reduce to low heat and cook for 15 minutes.

After the beans cool and the pressure drops, open the lid, then add the sugar and salt to season.

Grill desired amount of mochi, or soften them in the microwave, add to the zenzai, then serve.
