Bring 2 cups water to boil for rice
Once boiling add 1 cup rice and cover, reduce heat to low and simmer until tender Keep covered - 2
Marinate beef (up to 3 hours ahead)
Combine soy sauce, hoisin, honey and half of the ginger and garlic to meat
Toss and cover in fridge - 3
Cut ends off bok Choy and then cut into strips

Heat large drizzle olive oil in large pan over medium high heat. Add beef to pan reserving excess marinade. Cook about 5 minutes until just no browned Remove from pan set aside

Add scallion whites, onions, remaining ginger and remaining garlic to same pan with another drizzle of oil over medium heat. Cook, tossing until fragrant about one minute. Add bok choy, broocoli, carrots and all other veggies tossing until tender. Season with salt and pepper

Return beef to pan and allow to bubble to thicken sauce Salt and pepper Pour over rice on plates to serve
