Brown meat and add taco seasoning and water. Put in bowl after done.

Add rice into hot pan with olive oil. Add in onion. Brown rice and onion for a few minutes. Add in salsa and broth. Let simmer for 20-25 min.

Add meat back in when rice is done. Add black beans, half can of enchilada sauce, queso (to taste)

Separate into meal prep bowls. Top with cheddar cheese and enchilada sauce to taste.
