Ingredients

  1. 1 lbground beef or Turkey
  2. 1 packageTaco seasoning
  3. 3/4 cupwater
  4. Chopped onion
  5. Chopped bell pepper
  6. 1.5 cuplong grain rice
  7. 3 tbsolive oil
  8. 4 cupschicken broth
  9. 1 cupsalsa
  10. 1 canBlack beans
  11. 1 canenchilada red sauce
  12. Queso
  13. Cheddar cheese

Cooking Instructions

    Brown meat and add taco seasoning and water. Put in bowl after done.

  2. 2

    Add rice into hot pan with olive oil. Add in onion. Brown rice and onion for a few minutes. Add in salsa and broth. Let simmer for 20-25 min.

    Add meat back in when rice is done. Add black beans, half can of enchilada sauce, queso (to taste)

  4. 4

    Separate into meal prep bowls. Top with cheddar cheese and enchilada sauce to taste.
