This totally vegan yummilicious one pot vegetable Italian minestrone soup is a complete meal with veggies, herbs, pasta and a very less spices.

This Italian soup recipe is full of protein and nutrition with lots of veggies. I will make it in one pot but you can boil the pasta or macaroni separately and combine them while serving. You can use as many veggies as you want or like or you have at your home. You can even add boiled beans or rajma to it to make it more nutritious. You can use any variety of pasta to it. If you can lay your hands on fresh basil and rosemary use them as it will give more taste to the soup.

Before cooking make sure every ingredient is ready chopping cutting must be done before as we have to just saute everything the veggies must be on a crunchier side so that it couldn't get soggy when we cook them with pasta or macaroni. In a deep vessel add oil if don't have olive oil use any flavorless oil. When got heated add the finely chopped ginger and garlic saute it for a minute then add green chillies and red chilli flakes.

These chillies will give a good flavour in the oil after that add the finely chopped onions and saute till the rawness goes away. We don't have to brown the onions it should only be transparent. Cook everything on high flame. Now add the chopped carrots and saute. After that add all the dry spices along with salt except the herbs. Mix all the finely chopped veggies now and saute well now add the chopped tomatoes in it and mix. You can even make the paste of tomato then add.

If you like bite size veggies in your soup then roughly chop them. If you want to add beans add this stage. Now add the macaroni or pasta and mix it. Now add water as thin or thick you want your soup to be for me 1 litre is enough for 2 cups of pasta. Now add the herbs and before adding rub it between your palms then add by this it will give a great taste. Taste Salt and pepper at this stage and adjust as per your like. Allow it to boil then lower the flame cover it and cook for 20-25 minutes.

Then off the flame garnish it with chopped coriander leaves and serve hot. You can even add cheese also while serving. Serve piping hot. Make it and enjoy it with your loved ones.
