Ingredients

  • 1 3/4 cupsflour (about 225 grams)
  • 3/4 cupgrated carrots (about 100 grams)
  • 1/3 cupchopped or sliced walnuts or almonds (about 40 grams)
  • 1 packetbaking powder
  • 3eggs
  • 1 1/3 tablespoonsmilk (about 20 ml)
  • 3/4 cupbrown sugar (about 180 grams)
  • 1 teaspoonground cinnamon
  • 7 tablespoonsbutter (about 100 grams)
  • 3apples
  • 1 tablespoonapricot jam (about 10 grams)

Steps

    Preheat the oven to 350°F. Meanwhile, grease a 10-11 inch springform pan with butter and line it with parchment paper. In a bowl, sift the flour and add the carrots, nuts, eggs, baking powder, cinnamon, milk, butter, and sugar. Mix everything together with a whisk.

    Pour the batter into the prepared pan, using a spatula to help spread it evenly.

    Peel the apples, cut them in half to remove the core, then slice them thinly. Arrange the slices in a circular pattern on top of the cake.

    Brush the apples with apricot jam and sprinkle with a little brown sugar.

    Bake for 40 minutes. Check for doneness by inserting a toothpick into the center; it should come out dry without any batter sticking to it. Place the carrot cake on a serving plate and serve.
