Wash and soak 1 and 1/2 cup of basmati rice for 30 minutes. Drain them. Bring 6-7 cups water to boil. Add 1 bay leaf, 1 inch cinnamon stick, 2 cloves, 1/4 cumin seeds, 1 cardamom, some mint leaves, 1 tbsp of oil, 3/4 tsp salt and soaked basmati rice. Cook on high heat till the rice is 70 percent done.

Wash and peel and cut the potatoes. Now saute potatoes in 2 tbsp of oil by adding a little amount of salt and red chilli powder on medium to low flame until the potatoes become almost Cooked and tender. Now transfer to a bowl retaining the oil in the kadhai. Keep the potatoes aside. Soak 8 strands of saffron in 2 tbsp hot milk and keep aside. In the same kadhai fry 1 cup sliced onions. Fry them until the onion slices become golden brown. Now transfer them to a plate.

In a large bowl add 1/2 cup yogurt, fried potatoes, 1/2 tsp kashmiri red chilli powder, 3/4 tbsp ginger garlic paste, 1/2 tsp salt, 1/2 tbsp biryani masala, roughly crushed 3-4 green cardamom powder, some mint leaves, some fried onion, 1-2 green chilli (cut into slit), 1 tbsp of oil in which onion slices are fried. Now mix everything well. Now set aside for 1 hour.

Now heat 1 tbsp of oil and add 1 tbsp of ghee with oil in a non-stick kadhai. Now add 1/2 tsp sahi jeera, 2 cloves,1 star anise, 1 inch cinnamon stick. When the spices start to sizzle and the marinated potatoes and cook until potatoes become soft. If needed sprinkle water a little amount to cook potatoes.

Top the potato gravy with 2 tbsp of coriander leaves and mint leaves. Now spread a layer of rice evenly. Spread the fried onions over the rice and then spread some chopped coriander leaves and mint leaves evenly. Sprinkle a little amount of biryani masala. Now pour saffron milk evenly all over. Now pour 1 tbsp of ghee all over it. Now close the lid of the kadhai. Make sure the lid is air tight. Place this kadhai on the hot flat tawa. Cook for 12-15 minutes on low heat.

Once the flame is off then set the kadhai aside without opening the lid for 10-12 minutes. Now fry some green peas by adding a little amount of salt and biryani masala. Then open the lid and add the fried green peas. Now take serving plate and serve hot.
