I have been researching a lot of healthier alternatives to packaged meals, and oatmeal muffins are an awesome way to go. This recipe can be modified by adding different mashed or pureed fruits, such as applesauce, pumpkin, sweet potato, and more. Ingredients

  1. 2 cupmashed banana
  2. 2 cupall-purpose flour
  3. 1 cupquick-cooking oats
  4. 1eggs
  5. 1 cupmilk
  6. 1/2 cupwater
  7. 3 tbspsugar
  8. 1 tbspvanilla extract
  9. 1 tspbaking powder
  10. 1 tspbaking soda

Cooking Instructions

    Preheat oven to 350°F. Spray 18 muffin cups with non stick spray

    Mix all ingredients until well blended.

  3. 3

    Scoop out batter into cups, filling about 3/4 full.

  4. 4

    Bake for 20-25 minutes or until desired doneness.
