Ingredients

  • 4chicken breasts, cut horizontally in half if thick
  • 2 tbspvegetable oil
  • 3 cupslong rice, washed till the water is clear and drained
  • 1medium onion, chopped
  • 2tomatoes, chopped
  • 4.5 cupsboiled water
  • 2bell pepper (red and green), chopped
  • 3 clovesgarlic, chopped thin
  • 2 tbspskabse spice
    Kabse Spice
  • salt to taste
  • whole spices
  • 3Cinnamon sticks
  • 3laurel leaves
  • 4-5cloves
  • 4-5cardamom
  • 2dried lemon
  • Dakkous
  • 3tomatoes
  • 1bell pepper
  • 1small onion
  • 2 clovesgarlic
  • 1/2 bunchcoriander
  • juice of half lemon, to taste
  • chilli (optional)
  • salt to taste
  • 3 tbspsolive oil
  • 1 tbspkabse spice
  • black pepper, to taste

Steps

    In a large pot, heat vegetable oil well then add chicken and cook for 3 minutes on each side.

  2. 2

    Add whole spices.

  3. 3

    Add onion, garlic and bell pepper then tomatoes.

  4. 4

    Add rice evenly. Add salt and kabse spice then add water (1 cm approx above rice level).

  5. 5

    Lower heat and leave on stove till water dries (20-30 minutes).

  6. 6

    To prepare dakkoud, blend all vegetables till desired texture. Add spices, lemon and olive oil to taste.

  7. 7

    To serve, reverse the pot onto a tray. Serve kabse hot with the cold dakkous on top.
