Kabse is from the gulf cuisine and Dakkous is kind of a salad served with it. Original Kabse is an elaborate recipes, here's a simplified version that preserve its taste and texture.

In a large pot, heat vegetable oil well then add chicken and cook for 3 minutes on each side.

Add whole spices.

Add onion, garlic and bell pepper then tomatoes.

Add rice evenly. Add salt and kabse spice then add water (1 cm approx above rice level).

Lower heat and leave on stove till water dries (20-30 minutes).

To prepare dakkoud, blend all vegetables till desired texture. Add spices, lemon and olive oil to taste.

To serve, reverse the pot onto a tray. Serve kabse hot with the cold dakkous on top.
