Crispy Cheesy Paneer Tikka Disc Recipe. Easy and Delicious Snack. This tasty snack can be baked in an oven or in a kadhai. It taste amazing as a stand alone snack but it can also be served with your favorite chutney or sauce.
A super tasty Recipe for the Green Chutney is also shred below. This is a home style green chutney which is regularly made at home. Adding ice cubes retains the green color of the chutney. I have used 3 ice cubes in this chutney alongwith 2 tablespoon of water.

Firstly, for the Paneer Tikka Marination: In a large mixing bowl add mustard oil and kashmiri red chilli powder and mix it well with the oil.

Next add coriander powder, garam masala powder, roasted cumin seed powder, black salt, chaat masala, salt, ginger garlic paste and kasuri methi and mix it well.

Then add lemon juice, roasted gram flour and yogurt and mix it well. The marination paste is ready.

Now add in the chopped paneer cubes and the finely chopped red, yellow and green bell peppers.

Next add the finely chopped carrot, onions and tomatoes. Mix until well combined. The vegetables need to be coated with the marination paste. Set it aside to rest for about 10-15 minutes.

To make the Green Chutney: In a mixer grinder jar add all the ingredients mentioned under "For the Green Chutney" and grind it into a fine paste.

I got this beautiful color by using 3 big ice cubes and 2 tbsp water.

Heat oil in a kadai/pan. Add in the marinated paneer and vegetable mixture and saute on medium flame for about 5-6 minutes or until oil appears at the sides. Keep stirring occasionally. Paneer Tikka is ready. Turn off the flame and transfer the mixture into a bowl. Allow it to cool down.

For making Mint Mayonnaise: In a small bowl add the green chutney and mayonnaise and mix it well. Mint Mayonnaise is ready. Keep it aside.

Take two brown bread slices. To make a disc, take a round cookie cutter and cut both the bread slices into round shapes. Now take one round bread slice and cut it with a smaller size round cookie cutter. So we will use one round bread slice and this bread ring to make our crispy cheesy paneer tikka disc. Similarly, cut the rest of the bread slices. Spread some butter on the under/lower side of round bread slice and upper side of the bread ring.

Take one round bread slice and spread the mint mayonnaise all over the slice. If you don't have mint mayonnaise, you can use any chutney or sauce. Now place the bread ring on it and press it slightly so that it sticks to the bread slice. When we place the bread ring on the round bread slice, it will form a disc. Fill the center space with the prepared paneer tikka filling. Do the same for all the disc.

Add grated cheese on top of the paneer tikka filling. Garnish with some mexican seasoning on top. Apply some butter all over the sides of the disc. Paneer tikka disc is ready. You can bake it in an over or a kadhai.

To bake it in a oven. Preheat the oven at 180° for 10 minutes. Grease oven tray with butter or oil or just place a baking sheet over the baking tray. Place the prepared paneer tikka discs on the baking sheet and bake at 180° for 8-10 minutes or till the cheese melts and the bread turns crispy and golden brown.

This snack can also be baked in a kadhai. For that, preheat a heavy bottomed kadhai. Add normal/regular salt. Place a stand in it. Cover and let it heat on medium flame for 10 minutes. Take a steel plate. Cover it with aluminum foil. Grease it with oil or butter. Place the discs on the plate and carefully place it on the stand. Cover and cook on low medium flame till the cheese melts and the bread turns crispy and golden brown. Ie. Around 15 minutes.

Crispy Cheesy Paneer Tikka Disc is ready. Serve it hot as a stand alone snack or with your favorite chutney or sauce.
