Savoury BBQ Burrito (Vegan)

This burrito is not spicy, but very savoury, with a hint of sweetness. If you want to make it spicy, just add some chilli peppers or hot sauce to it 🌯
I suggest using seitan (wheat gluten) because it has a more savoury umami flavour. You can also use tofu or tempeh, but make sure to marinate it in soy sauce or teriyaki sauce first, or a vegan barbecue sauce 🍽️
If you can't find beans in barbecue sauce, then simply use red kidney beans or black beans and mix them with some barbecue sauce, maybe some vinegar, and salt and pepper as well 🫘
Vegetarians, you can add grated cheese and melt it on top of the burrito, or inside with the filling. Vegans, you can use a vegan cheese substitute 🌱

Start off by toasting the bell pepper a bit, on a pan with no oil or an open flame if you have a gas stove. Remove once grilled, until the bell peppers release their flavour and aroma. Slice into strips once they cool down a bit.

If you don't want to use oil, add some soy sauce to the same pan and immediately add sliced strips of seitan. Make sure to add some cold water to the pan to regulate temperature. Fry until the water evaporates.
Of course, you can also use sunflower oil, which makes it easier, but still add soy sauce for more umami flavour.
Remove from heat once you're done, let it cool down a bit.

Put the bell pepper and seitan strips, as well as some beans from the can, in the centre of a large tortilla. Season the filling with salt and pepper to taste, as well as other spices you like.
Roll the tortilla into a burrito by folding one end over and under the filling, tucking in the sides (optional), then rolling it tightly into a conical shape.

Put the burritos into a dry pan. Optionally, coat it with a little bit of oil. Flip and turn with a spatula until golden brown. Make sure to get the sides too, not just the top and bottom. Best to do it one by one.

Once all sides are golden brown, serve the burritos with some red salsa on top. I like to add some salt and pepper to the salsa, as well as some lemon or lime juice. Garnish with dried parsley (or similar). Enjoy your meal!
