I love this Kerala style Vegetable stew and Appam.It is healthy and tasty. We can add a variety of vegetables in stew. The flavour of coconut milk is awesome.Vegetable stew is mildly spiced and aromatic.Appam is again very tasty and a good accompaniment of vegetable stew.It is wholesome and comforting.

I love this Kerala style Vegetable stew and Appam.It is healthy and tasty. We can add a variety of vegetables in stew. For vegetable stew - Cut all the vegetables into 1 inch pieces.

Heat butter in a pan,add clove, cardamom and cinnamon stick.Saute.Add garlic, ginger and green chilli.Now add onion till it becomes translucent.Add all the vegetables, and 1cup water.Add 1 cup thin coconut milk.Cover and cook till vegetables become tender.Add thick coconut milk.(11/2 cup)Sprinkle salt and black pepper.Swich off the gas stove.

For Appam- grind idli batter,fresh coconut and cooked rice.Add.water to make thin batter.Mix salt.

Take a deep tawa,grease it with oil,pour 1 ladle full of the batter, Drizzle some oil on the edges of the dosa.Cover and cook it for 3-4 min.on medium to low flame.

Your delicious and healthy vegetable stew and Appam.is ready to serve.
