Tuna Sisig

Sisig is a well-known bar chow dish (pulutan) common in the Philippines, and a frequent accompaniment to beer. It's usually made with pork cheeks but also only a little less frequently with milkfish (bangus) or tuna as I've done here. I like mine crunchy so that's what I've done here. 🇵🇭🐟🍻

On medium heat, sauté onions and garlic until transparent, about 5 minutes. Add tuna, fry for 2-3 minutes.

Add vinegar, soy sauce, and black pepper. Increase heat to high, stir well until liquids boil nearly dry, about 15 minutes. Reduce heat back to medium, add jalapeno, let fry for a couple minutes.

Reduce heat to medium low. Add mayonnaise and mix well. Let fry until crisp, about 10 minutes, stirring to fry evenly.
