Ingredients

  1. Chicken thighs
  2. Corn oil
  3. Veggies
  4. Carrots
  5. Chopped kale
  6. Pinto beans
  7. Large Red onion
  8. 3 tbsMinced garlic
  9. Seasonings
  10. 1 tbsGinger paste
  11. 2 tbsTomato paste
  12. 2 tspThyme
  13. 1 tspChilli powder
  14. 1 tbsCumin powder
  15. 1/2 tbsPaprika
  16. 2 tspCayenne pepper
  17. 1 tbsBlack pepper
  18. 1 tbsChicken bouillon or 1c chicken broth
  19. Adobo all-purpose seasoning
  20. 1/4 cupRed wine vinegar (optional)

Cooking Instructions

    Boil pinto beans until tender then drain and rinse

  2. 2

    Heat frying oil in a pot. Add diced onions, minced garlic, garlic paste & sauté for 10 minutes on medium-low heat

  3. 3

    Add tomato paste, thyme, cayenne pepper, paprika, chili & cumin powder. Simmer until the paste cooks to a dark red color. Add water if needed

    Add raw chicken thighs and sauté. After about 10 minutes add 4c water or 2c water, 2c broth and bring to a boil. I added pinto beans, chicken bouillon, adobo seasoning and black pepper into the water broth at this point.

    Lower heat, cover and simmer on medium-low for 1hr. Shred cooked chicken, then add vinegar, carrots, and chopped kale. simmer for about another 30min-1hr until carrots are tender.
