Stuffed Cauliflower-Tuvar-Matar Paratha

Coarsely grind cauliflower, tuvar dana and fresh green peas in vegetable chopper.
In cooking pan add heat oil. Do tempering of mustard seeds asafoetida. Add green garlic chilli ginger paste and tumeric powder. - 2
Add sesame seeds and peanut coarse powder. Saute. Add veggies, baking soda,salt, sugar. Mix well. Add 1/4 cup water. Cover with lid filled with water. Cook on low flame till veggies are tender. Add lemon juice mix well. Off the flame. Sprinkle chopped fresh coriander leaves. Cool the stuffing mixture. Divide into 4 parts.

In mixing bowl add wheat flour and maida, oil, salt. Mix well and add little little water to bind semi soft dough. Keep aside. Knead dough and divide into 8 flattened balls. Roll each into 6" diameter round rotis.

Take one roti. Spread one part of prepared veggies mixture as shown. Grate cheese on it.

Cover with another rolled roti. Seal the edge part. Roast on hot griddle on both sides with ghee. Similarly prepare all Stuffed Cauliflower Tuvar Matar Parathas.

Serve /Relish Delicious Nutritious Hot Cauliflower Tuvar Matar Parathas with fresh curd and green coriander leaves chutney.
