Ingredients

  1. 4Russet Potatoes
  2. 6Bacon Slices
  3. 1Celery Stick
  4. HalfYellow Onion
  5. 3Garlic Cloves
  6. 5 tbspFlour
  7. 2 1/2 cupVegetable Stock
  8. 1 tbspVeggie Bouillon
  9. 2 cupsHeavy Cream
  10. 5Green Onions
  11. 2 cupShredded Cheddar
  12. Spices
  13. 1 tspSmoked Paprika
  14. 1 tspSalt
  15. 1 tspOnion Powder
  16. 1 tspGarlic Powder

Cooking Instructions

  1. 1

    Coat potatoes in olive oil and salt. Poke holes with a fork to vent. Then bake for 45 minutes to an hour at 450° F

    Chop bacon into thin slices then cook until browned and crispy. Remove bacon leaving behind bacon fat

  3. 3

    Add diced onion and celery. Cook until onion becomes light brown. Add minced garlic.

    Bloom spices ~30 seconds to a minute, then add flour and cook down.

    Pour in vegetable stock and bouillon. Reduce

  6. 6

    Add cream and cubed potatoes. Boil for 12 minutes covered

  7. 7

    Add bacon, green onion, cheddar. Salt and pepper to taste
