It’s the most ancient Indian recipe which has it’s origin in Indus valley civilisation. Brinjal/egg plant/ aubergine is one of the few vegegables which is truly Indian.
Steps

Slit brinjal and fill it with garlic and chili and roast it
- 2
Heat mustard oil in a pan and add dry red chili, cumin seeds, ginger and garlic

Add onions, and cook till it’s translucent. Than add haldi powder and red chili powder.

Add tomatoes and salt. Cover the lid and cook it for 5 minutes

Now add roasted brinjal, garam masala and cook for 10 minutes
- 6
Add coriander leaves and it’s ready to Serve
- 7
Tip : Put the roasted brinjal in bowl and cover it with a lid so that it can cook in it’s own heat and retain moisture. Do not wash it off in water.
