Temple style Curd Rice

Everywhere in the south, a prasadham meal which is served to devotees in temples after being offered to deities, is incomplete without the Curd rice. It's prepared by cooling steamed/ cooked rice, mashing it with yoghurt, adding salt ,a pinch of sugar and tempering with ghee, mustard, lentils, cashews dry red chillies, curry leaves, asafoetida, chopped ginger and then garnishing it with pomegranate seeds. It is a heavenly dish which must be relished!

Steps

First, mix 1/2 of the yoghurt into the cooked and cooled rice and mash well with back of hand.

Then add rest of the curd, milk and mix well. Add salt, sugar and some pomegranate seeds too.

Then prepare tadka or tempering with the given ingredients and when it sizzles, pour on the rice.

Transfer to serving bowls, preferred are clay pots for added taste.

Garnish with more pomegranate seeds and coriander leaves.(Optional) Offer to the divine and serve cold as prasadham!, 🙏
