Microwave Steamed Bread - Safe Even For Nursing Mothers

Since I have a tendency to get mastitis and my child has food allergies, I wanted to make a low-sugar steamed bread without dairy or egg products. Since the recipe is so easy, the result may not look so good, but they are perfect as a fuss-free snack! Using rice flour makes them even more filling.

For those concerned about using instant cocoa mix due to dairy allergies, substitute cocoa mix with 1/2 tablespoons of sugar. The amount of cocoa mix at 1 tablespoon gives it a mild sweetness. Or for baby food, try using powdered milk instead. Even reducing the baking powder to 1/2 teaspoon gives enough rise! Adjust the ingredients when mixing to achieve the thick creaminess of the batter as in the photo in Step 2. For 1 serving. Recipe by hikochan2

Ingredients

1 serving
  • 6 tbspCake flour (or rice flour)
  • 1 tspBaking powder
  • 1to 2 tablespoons Hot chocolate mix
  • 4to 5 tablespoons Water

Steps

    Combine the dry ingredients in a Tupperware container (i.e. all ingredients except for water), close the lid and shake to mix.

    For a ratio of 1 tablespoon instant cocoa for the amount of flour, 4.5 tablespoons of water should be fine. Stir vigorously with a spoon. Lightly close the lid (leaving a gap for air to escape) and microwave for about 2 minutes at 500 W.

    It should rise a bit like this. If you steam it upside down, it should readily come out of the container. The result is a dense and chewy bread.

    If you bake them in muffin cups, they come out like this.

    Variation for baby food: 3 tablespoons cake flour, 3 tablespoon rice flour, 1 teaspoon baking powder, 1 teaspoon sugar, 4 tablespoons water.

    If you use rice flour (joshinko), the texture will be extremely smooth. It's also tasty with raisins!

    For use as baby food, I suggest using aluminum-free baking powder, and beet sugar as a substitute for refined sugar!
