Ingredients

1 hour 30 minutes
Serves 4 servings
  • 14 ozbeef steak (about 400 grams)
  • 7 ozbacon (about 200 grams)
  • 4yellow chiles (güero chiles)
  • 8spring onions (cambray onions)
  • 2 cupswater (500 ml)
  • 6small tomatillos
  • 1 bunchcilantro
  • 2jalapeño peppers
  • 1serrano pepper
  • 1/4onion
  • 2 clovesgarlic
  • 2 cupscooked pinto beans with broth
  • Salt and pepper (to taste)
  • For serving: chopped onion, chopped cilantro, and lime

    Fry the bacon and set aside. In the bacon fat, sauté the yellow chiles and spring onions, then set aside.

    In the same pot, fry the beef steak cut into thin strips. Season with salt and pepper. Meanwhile, blend the tomatillos, cilantro, jalapeños, serrano pepper, onion, and garlic until smooth.

    Pour the green sauce over the beef and bring to a boil. Check the seasoning. Add the cooked beans with their broth and let simmer for a couple of minutes.

    Add the spring onions, yellow chiles, and bacon back to the pot. Cook for about 5 more minutes, then serve.
