Ingredients

Serves 2 servings
  1. Romaine lettuce (or other greens) for 2 servings
  2. Penne pasta, 3 1/2 oz (100 grams)
  3. 1 packageShrimp,
  4. Plain yogurt, 1/2 cup (100 grams)
  5. 1 tablespoonLemon juice,
  6. Lemon zest, from 1/2 lemon
  7. 2 clovesGarlic, minced,
  8. Dill or fennel, a few sprigs
  9. 1 teaspoonSalt,
  10. 1 teaspoonBlack pepper,

Steps

    Gather all ingredients as shown in the picture.

    Prepare the pasta: Boil a pot of water with a pinch of salt, and cook the pasta according to the package instructions. Once cooked, drain and rinse with cold water.

    Cook the shrimp: Use the pasta water to blanch the shrimp until cooked. Drain and rinse with cold water.

    Prepare the vegetables: Soak the romaine in cold water, then chop into small pieces. Remove the thick stems from the dill and chop finely. Mince the garlic.

    Make the dressing: In a bowl, mix the plain yogurt, drained shrimp, dill, minced garlic, lemon juice, and lemon zest. Season with salt and pepper.

    Assemble: Combine the greens, pasta, and yogurt shrimp mixture. Enjoy!
