A delicious cold Turkish appetizer with high nutritional value.

Boil the lentils in water until fully cooked. Add salt, black pepper, and cumin. Stir in the bulgur, mix well, turn off the heat, cover, and let it cool completely.

Sauté the chopped onion in olive oil until soft. Add the tomato paste and red pepper paste, and continue to cook, stirring constantly, until the sauce thickens.

Add the sauce to the lentil and bulgur mixture. Knead everything together until well combined. Add the parsley, mix, and shape the mixture into finger-shaped pieces.

Serve on lettuce leaves with lemon wedges.
