Rinse and pat dry the chicken pieces. Add all seasonings except the black sesame oil, mix well, and marinate for 30 minutes. Cut the vegetables into bite-sized pieces. Before assembling, drizzle the chicken with black sesame oil and toss to coat.

Place half of the scallion, ginger, and garlic in a baking dish. Layer the marinated chicken on top, then add the remaining scallion, ginger, and garlic. Toss the mushrooms in the leftover marinade to absorb the flavor, then add them to the baking dish.

Top with sweet bell pepper. Preheat the oven to 400°F (200°C). Once preheated, place the dish on the lower rack and bake for 25 minutes (adjust time based on chicken size). During baking, open the oven and turn or mix the ingredients 1-2 times for even cooking. In the last 8 minutes, tuck the basil under the chicken and continue baking.
