This is a tempting instant mango achar. It is easy to make, quick and delicious.

Wash, peel and cut mangoes into cubes. In a pan heat enough water. When it comes to boil add mango pieces. Boil for 3-4 minutes or until 80 % cooked. Then strain water from them.

In a pan heat oil. Add mustard seeds, cumin seeds and fenugreek seeds. Add dry red chili. When mustard seeds crackles add asafoetida. Add cooked mango and stir gently. Add salt, red chili powder and jaggery.

Cook until jaggery melts. Switch off the flame. Finally add achar masala and mix it. Tempting achari aam sabji is ready. Cool down and store in a jar. You can store it in fridge for 15-20 days. Serve with roti, masala bhakhri or puri or as a side dish.
