Preheat oven to 350 lightly spray to loaf pans set aside

In a medium mixing bowl was together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt

In large mixing bowl with together the brown sugar and granulated sugar, vegetable oil, eggs, and vanilla extract, break up any cups of brown sugar and whiskey, until smooth

Add the crushed pineapple with juice in the grated carrots blend together using a spatula

Add the flour mixture and fold until just mixed in

Divide the batter between the two prepared pans. Bake for 35 to 40 minutes. Checked using a toothpick inserted into the center of the cake. Moist crumbs are OK but should not come out what

Cool for 30 minutes in the pan then remove to a wire rack to cool completely before icing

To prepare the icing combine the powdered sugar, cream cheese, butter, and vanilla in a small medium bowl. Be on low until the icing is smooth. Add a teaspoon of milk or quarter cup of confectioner sugar if needed for desired consistency.
