Turkey tenderloin medallions are juicier and more tender than if you buy a whole tenderloin and slice it yourself.

Dissolve the pepper sauce mix in the amount of water indicated on the packet using a measuring cup. You don't need butter or to heat it yet.

In a large skillet, add a little olive oil and sear the turkey tenderloin medallions with a pinch of salt in batches on both sides. Transfer to a plate.

Pour the dissolved sauce into the skillet, add the turkey back in, mix well, and simmer on low heat for the time specified on the sauce packet.

Serve the turkey with plenty of sauce for those who like to dip bread. Watch out for the whole peppercorns in the sauce.
