A delicious but, a little on the sweet side, soup. Very delicate flavoured with the flavours layered. My son-in-law said to jar it and sale it.

A delicious but, a little on the sweet side, soup. Very delicate flavoured with the flavours layered. My son-in-law said to jar it and sale it.

Slice the onions in half, then slice each half into half again. Then slice thinly. Season the onions with salt.

Melt 1 stick butter in a pot. Add the onion slices coating all the onions with butter. Allow to cook till brown but not burnt.

Add in the water and deglaze the pot. Continue to simmer till water is reduced.

Add the peppers and milk. When the milk is stirred in, add the tarragon. Stir well. Taste and adjust seasoning with the salt and pepper, if needed.

Allow the evaporated milk to heat up turn off the heat covered and allow to steep. As that is going on, slice the bread, butter it on both sides, and toast or fry with the rest of the butter.
