Preheat a large frying pain on high heat. Cook the ground beef until mostly browned. Season with salt and pepper.

Turn the heat down to medium. Add the butter.

Add the diced onion. Cook for 1 minute, then add diced mushrooms. Cook until the mushrooms are soft and browned.

Add the flour. Cook for 1 minute.

Add half the beef broth and deglaze the pan. Add the remaining half of the beef broth. Then add the sour cream and dijon mustard.

Simmer until the desired consistency is reached, or about 10-20 minutes.

In a medium pot, bring salted water to a boil. Cook pasta 10-15 minutes or until desired firmness is reached.

Once everything is cooked, strain the pasta and serve in a large bowl. Spoon the stroganoff over the pasta with diced green onion to taste.
