Bengal cuisine has no dearth of veggies made during Summer months. Chenchhki or dry veggie is very common. To use with Kasundi is top notch.
Steps

Wash the Kumro and Uchhe and peel, cut into thin slices and add to a bowl
- 2
In a wok heat mustard oil, add nigella seeds and when a aroma is there add Uchhe and fry for 2-3 mins, add slit green chilies and fry for 1 mins

Add turmeric powder into 3-4 Tbsp water and add that to the Ucche
- 4
When the Ucche is slightly cooked, add Kumro and cook for 3-4 mins on medium flame. Add salt and stir. Add little water if the veggies are not cooked.

When water is dried and oil surfaces add Kasundi and mix well, add sugar and stir once. Set aside

The preparation will be dry

Serve with steamed rice and enjoy 😊
