Serves 6 servings
  • 2 cupsall-purpose flour (250 g)
  • 3/4 cupsugar (175 g)
  • 4 1/4 cupswhole milk (1 L)
  • 4eggs
  • 5 1/4 ozpitted prunes (150 g)
  • 1/3 cuporange blossom water or rum (80 ml)
  • 1 1/2 tablespoonsbutter (20 g)

    Soak the prunes in tea.

  2. 2

    In a large mixing bowl, add the flour and a pinch of salt. Crack in the eggs and mix well until smooth.

  3. 3

    Add the milk, sugar, and orange blossom water or rum. Stir again until combined.

  4. 4

    Drain the prunes and fold them into the batter.

  5. 5

    Butter a baking dish, pour in the batter, and bake in a very hot oven (500°F/260°C) for 10 minutes. Then lower the oven temperature to 410°F (210°C) and bake for another 35 minutes.
