Ingredients

  • for stir-frying:
  • 1 tbspbutter
  • 1/2onion (petals)
  • 10beans (chopped)
  • 1/2carrot (chopped)
  • 1/2tomato (sliced & deseed)
  • 3 tbsppeas
  • 5baby corn (chopped)
  • 1/2 tspsalt
  • 1/2yellow capsicum (sliced)
  • 1/2green capsicum (sliced)
  • 1/2red capsicum (sliced)
  • for sabzi:
  • 2 tbspoil
  • 1 tspcumin
  • 1 tspkasuri methi
  • 1 tspGinger-Garlic paste
  • 1chilli (slit)
  • 1/2onion (finely chopped)
  • 1/2onion (finely chopped)
  • 1/2 tspturmeric
  • 1 tspchilli powder
  • 1 tspcoriander powder
  • 1/2 tspsalt
  • 2tomato (chopped)
  • 2 tbsptomato sauce
  • 1/2 tspgaram masala
  • 1/4 tsppepper powder
  • 2 tbspcoriander (finely chopped)

Steps

25 Minutes
  1. 1

    Firstly, in a pan heat 1 tbsp butter. add ½ onion, 10 beans, ½ carrot, ½ tomato, 3 tbsp peas and 5 baby corn.

    Next, add ½ tsp salt and stir fry on high flame for a minute.

  3. 3

    Then also add ½ yellow capsicum, ½ green capsicum and ½ red capsicum.

  4. 4

    Now, stir fry until the vegetables shrink slightly yet remain crunchy. keep aside.

  5. 5

    Next, in a large wok, heat 2 tbsp oil. add 1 tsp cumin, 1 tsp kasuri methi, 3 clove garlic, 1 inch ginger and 1 chilli.

  6. 6

    Now, saute until the spices turn aromatic.

  7. 7

    Now, add ½ onion and saute until onions turn golden brown.

  8. 8

    Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and ½ tsp salt.

    Saute on low flame until the spices turn aromatic.

  10. 10

    Furthermore, add 2 tomato and saute until tomatoes turn mushy.

  11. 11

    Now, add 2 tbsp tomato sauce and mix well forming saucy consistency.

  12. 12

    Add in sauteed vegetables. along with ½ tsp garam masala and ¼ tsp pepper powder.

    Mix well keeping the flame on high.

    Now finally, add 2 tbsp coriander and enjoy vegetable jalfrezi with roti, Paratha, nun etc.
