Miraculous Meat-less Tonkotsu Ramen-Style Somen Noodles

I used some somen noodles left over from the summer and healthy soy milk to throw together something for lunch...and the result tasted kind of like tonkotsu (pork bone) ramen! Even the children were like "Is this ramen? Yum yum!" and it was a big hit. It's rich-tasting even without any animal protein!!!

The saltiness of shiro-dashi and miso vary, so please adjust the amounts for the soup to your taste.
Somen noodles get limp quickly, so cook them so that they are left a bit firm. For 1 serving. Recipe by kaisyan

Ingredients

  1. For the soup:
  2. 2 tspVegetable oil
  3. 1 pieceGinger
  4. 15 cmThe white part of a Japanese leek
  5. 2 tspMirin
  6. 2 tspMiso
  7. 200 mlSoy milk
  8. 1 1/2 tspShiro-dashi (or substitute with usukuchi soy sauce)
  9. 1☆ Ground sesame seeds
  10. 1☆ Sesame oil
  11. 1☆ Ichimi spice
  12. 1☆ Thin green onions or scallions
  13. 1☆ Pepper

    These are the ingredients. Finely chop the ginger and leek. Plus you need somen noodles.

    These are the toppings.

    Heat some oil in a frying pan and stir-fry the leek and ginger.

    When they've turned soft, add the mirin and miso and stir-fry quickly.

    Add the soy milk and shiro-dashi, taste and adjust the seasonings. That's the soup done!

    Cook the somen noodles so still they're firm. Drain and put into a serving bowl and add the soup. Add the toppings and it's done.
