The first step is to clean the whole chicken inside out. The cavities must be cleaned properly then make 3-4 deep gashes on both side of the breast and 1-2 on the thighs. Then comes the most important step branning of the chicken don't skip it by doing this step the chicken will be more tender and juicy and all the impurities and smell of the meat goes out. In a big bowl keep the washed chicken then add a mug of water to it along with 1/4 cupsm of white vinegar and 2 tbsp salt. Mix those well.

Make sure the chicken is submerged properly in it and keep it aside for 1-2 hours. After that thoroughly wash the chicken 6-7 times so that all the salt and the vinegar comes out. Now pat dry the chicken so that all the excess water is dried. Now let's prepare a marinade for the chicken. Simply in a big bowl add the yoghurt make sure it's thick and fresh. Add all the above ingredients written in the marination section and mix it really well. Once done put the whole chicken in it and coat it.

Coat it inside out with the marinade making sure it covers all the bones and gashes. Use your hands to do it properly. Throughly rub the cavity with the marinade. Cover it and keep it aside for at least 2 hours or if you have time in hand marinate it overnight as it's gives best resul. The third step is preparing the stuffing for that take chicken mince along with spices mentioned in the stuffing section along with 2 hard boil eggs. In a wok add 2-3 tbsp oil when it start to heat up add the eggs

And fry it for 2 mijutes just to give marks to it. Take it out and keep aside. Now in the same wok add onions and cook it till translucent then add ginger and garlic paste and cook it till the rawness goes away then add all the dry spices mentioned in the stuffing section and cook for 3-4 minutes then add tomatoes and cook again finally add the chicken mince and mix very well. Cook it till the oil oozes out then add 1/2 cup water mix it cover it and cook till the mince dried out again.

And the oil seprates it will take not more than 10 minutes. Add the chopped green chillies saute it and take it out in a bowl and keep it aside. The stuffing is ready not comes the grilling of the chicken. Take out all the excess marinade and keep it aside for further use. Now stuff the cooked chicken mince in the cavity of chicken and then place the fried eggs. Then cross the chicken legs and tie it with a thread so that it becomes easy to grill and cook. You can cook this chicken in oven also.

I will cook it in a wok add 1/2 cup oil and place the marinated and stuffed chicken in it. Cook it on a high flame from all the sides very gently so that it won't break. Cook it for 5-7 minutes on both the sides to give a good grill marks to it. Once done take it out on a plate and keep it aside. Now comes the final step preparing the grave for it. Firstly make a smooth paste of dry fruits along with whole spices mentioned above in the shahi masala section. Then soak the saffron strands.

For that keep the saffron strands in a bowl add 2-3 tbsp warm water to it and keep it aside. It's a totally optional step. Now in the same wok and oil add the chopped onions and cook till golden brown then add the ginger garlic paste and cook till the rawness goes away. Then add the dry spices mentioned above in the gravy section and cook again till the oil comes on surface then add the tomato paste and cook again when oil seprates lower the flame snd add the beaten yogurt cook it continuously.

Till the oil comes on the surface then add the shahi masala and cook again. Then add the soaked saffron to it and mix well. Cook the gravy really well the more it will be cooked the better the taste will be. Once the oil oozes out add the grilled chicken to it and pour the gravy on it. Keep the breast side down it will take more time to cook. Cover it and cook it on low flame. After 18-20 minutes flip the chicken and cook for 7-10 more minutes. It takes 25-30 minutes to be completely done.

Once done garnish it with chopped green coriander leaves. Take out the thread before serving. Serve it with the choice of your bread and rice.
