Green Tomato Chutney

A lovely looking Chutney with Green Tomatoes that are available without any difficulty throughout the Year in our Country. These are juicy and a bit more tangy.
They taste yummy alongside Simple Rice. The colour looks lovely as well. When they are available everywhere online as well as in the Vegetable markets, it's absolutely inviting and we can't resist ourselves from making the Sabzi or the Chutneys.
It can be cooked all on it's own and can be cooked in combination with a few other Vegetables too like Potatoes, Pumpkin, Bottle Gourd etc.
It's a bit sour than the normal Red one's that we all use daily in most of our cooking yet there is something unique and special about them. It was a favourite Vegetable of my late father. Infact he used to grow them in our Kitchen Garden as he was an ardent lover of nature and knew gardening so well. In our childhood, we had all the Vegetables grown at home. We never use to buy them.
A simple yet a flavourful Chutney that can be enjoyed by all. Happy Mealtimes!

Steps

Wash and chop the tomatoes using a hand held chopper. It makes the job easier. Meanwhile heat oil in a kadai. Add asafoetida at first followed by the mustard seeds. Allow them to crackle a bit.

Next is to add the ginger garlic green chilli paste along with the chopped onions. Saute until translucent and light pinkish in colour. Now add the chopped tomatoes. Also in goes the required powdered spices. Mix well.

Cover and cook on a low heat until done. Garnish with some freshly chopped coriander greens. Serve as a yummy side dish to many an important meals. Yum!
