Simple & Delicious Potatoes & Red Peppers

Ingredients

4 people
  1. 2 lbsSmall To Medium Potatoes (Peeled Or Unpeeled)
  2. 1Large Onion (Halved & Sliced 1/4 in.)
  3. 1Large Red Bell Pepper (Sliced 1/4 in.)
  4. 6 ClovesGarlic (Smashed & Halved)
  5. 3-4 CupsFresh Baby Spinach (Roughly Chopped)
  6. 1/2 CupFreshly Grated Parmesan
  7. 2-3 TbspOil Of Choice (I Use Grapeseed Or Olive Oil)
  8. 2-3 TbspButter
  9. 1-2 TbspPaprika
  10. Salt (To Taste)
  11. Black Pepper (To Taste)

Cooking Instructions

  1. 1

    Heat a Large Pot of Water to Boiling over High Heat. Add Whole Potatoes. Allow to Boil for 10 - 12 Minutes.

    Heat a Deep Frying Pan over Medium Heat. Add Oil & Butter. Add Halved Garlic Cloves, and Saute until Golden Brown on Both Sides.

    Add Sliced Onions, and Saute for Several Minutes until Onions are Soft and beginning to Caramelize. Salt Lightly & Stir Occasionally. Add Sliced Red Peppers, and Saute until starting to Soften. Add some Salt, Black Pepper, & the Paprika.

    Add in the Boiled Potatoes. Stir Well, & Cook for Several Minutes, Stirring Frequently.

    Add in the Spinach & Parmesan. Cover with Lid, and Cook for about 5 Minutes. Uncover & Stir. If the Spinach hasn't Wilted Completely, Cover and Cook for another Couple Minutes. Taste for Seasoning.

    Either turn Heat to Low (To keep Warm) or Turn off Heat Completely. Serve & Enjoy!
