These days we can find many creative fusion style Sushi Rolls, can’t we? Today I added Smoked Salmon & Avocado Salad on Sushi Rice. Dressing is made with Mayonnaise and Dill. Absolutely delicious!

Ingredients

10 minutes
1 Serving
  • Sushi Rice
  • 1serving (*about 200g) Cooked Short Grain Rice *should be hot
  • 2 teaspoonsSugar
  • 3 teaspoonsRice Vinegar
  • 1/5 teaspoonSalt *slightly less than 1/4 teaspoon
  • *Note: If you prepare more than 1 serving, see my ‘Sushi Rice’ recipe
    Sushi Rice
  • Toppings
  • 1/2Avocado
  • 50 gSmoked Salmon
  • Some thin slices Red Onion
  • Lettuce
  • Dill
  • Dressing
  • 1 tablespoonJapanese Mayonnaise
  • 1/2-1 teaspoonLemon Juice
  • Salt & Black Pepper as required
  • Finely chopped Dill

Steps

10 minutes
  1. 1

    Place HOT cooked Short Grain Rice in a bowl, that can be a serving bowl. Mix Rice Vinegar, Sugar and Salt in a small bowl, and add it to the hot Rice. Mix well, then set aside.

  2. 2

    Combine the dressing ingredients in a small bowl.

  3. 3

    Cut Avocado and Smoked Salmon into bite-size pieces. Arrange Lettuce, Onion, Avocado and Smoked Salmon on the Rice.

  4. 4

    Drizzle the dressing over the toppings, add some fresh Dill and extra Ground Black Pepper. *Note: You can combine all the toppings and the dressing in a separate bowl, then place on top of the Rice.
