Steps

Wash all the Brinjal Properly and cut them into four parts without Breaking the Brinjal. Check all the Brinjal very Carefully.

Roast Peanuts and Coconut, then add Garlic and Ginger and finely Chopped Onions and tomato and make the Paste of all above ingredients.

Drain all the water from Brinjal and fill the Masala Paste in the Brinjal Fully.

Now in a Pan heat the Oil add Some Mustard and cumin Seed, then add finely chopped Onion and saute until onion turn Golden. Then add Chopped Tomatoes and saute them.

Then add Red Chilli Powder, Turmeric Powder, Coriander Powder, Cumin Powder, also add some Garam Masale and salt as to taste. Stir to mix properly. Then add peanut, coconut Paste.

Now gently put Stuffed Brinjals. and mix properly. add 1 cup water and salt as needed. Cover with Lid and simmer 20 to 25 mins. on medium to low heat.

Add some water if the gravy looks thick. keep on 5 to 10 mins in a low flame. Off the flame and lastly add Coriander leaves.

Now Bharli Vangi is ready for Serving.
