Combine dhokla flour, sour curd (dahi) and 2cup water approx in a bowl and mix well using hands. Cover and keep aside to ferment for at least 6-7 hours.

Add green chilli paste, ginger paste, haldi, oil and salt. Mix well. Add soda in water in a bowl. Divide the better into 3 equal portions.

Grease a thali using oil. Put water for boiling in a kadai or steamer.

Add soda water in one portion of better and mix well. Pour it immediately into the greased thali. Cover steamer. Steam the dhoka in a steamer for 10 minutes.

To check if the dhoka are cooked or not, insert a knife or toothpick in the centre and check if it comes out clean. Cool slightly and cut dhokla into diamond or square shaped. You can serve immediately with chutney but if you like then heat some oil and add mustard seeds, jeera, til, green chilli and curry leaves. Spread this tempering on the dhoka.

Serve soft and fluffy the Khatta Dhoklas immediately with green chutney, oil, red lehsan chutney. Enjoy as a starter, as a tea time snack, for breakfast or any time you are hungry. You can also carry it while traveling or serve it as a side dish with any meals. Also use this as a tiffin box for kids.
