Zenzai Basic Sweet Red Bean Soup (How to Cook Adzuki Beans)

This is a really basic recipe for cooking adzuki beans. It's easy and tasty, so it's how I usually do it. I like to serve it as-is as sweet red bean soup, so I don't add any salt, but feel free to do so.
While cooking the beans, ensure that they are always covered in water. Add water as necessary (check every 30 minutes).
If you want to make it less sweet, reduce the amount of sugar to 150 g.
Mashing some of the adzuki beans while cooking them will make a countryside-style adzuki soup. Recipe by Shinyori-na

Cooking Instructions
- 1
Rinse the adzuki beans and add enough water or boiling water to cover. Heat on high.
- 2
After bringing the water to a boil, pour 400 ml of cold water and continue to boil over high heat.
- 3
After bringing it back to a boil, discard the water and drain the beans in a colander. Rinse quickly to get rid of the bitterness.
- 4
Cover with 4 to 5 times more water than beans and bring to a boil. Reduce the heat to low and continue to cook over low heat for 1 1/2 to 2 hours.
- 5
After the beans are tender, add the sugar.
- 6
Adding water several times if necessary, continue to cook for about 1 hour. When the liquid is the consistency you prefer, it's done!
- 7
If you let it stand for about 30 minutes after removing it from the heat, the flavor will become richer.
- 8
It's true comfort food.

Zenzai (Sweet Red Bean Soup) in the Pressure Cooker! Zenzai (Sweet Red Bean Soup) in the Pressure Cooker!
If you use a pressure cooker, you can make zenzai in less than an hour! It's so easy, yet unbelievably delicious!! The honey gives a rich taste and the salt brings the flavors together. I succeeded in coming closer to the flavor of my mom's zenzai.Add the sugar in several batches; otherwise, the beans will harden. Stir gently from time to time during simmering to prevent scalding. Since it's a simple dish, I recommend using good quality beans and water. Recipe by Toiroiro cookpad.japan -

Simple Zenzai with Chunky Sweet Aduki Bean Paste Simple Zenzai with Chunky Sweet Aduki Bean Paste
I usually use homemade tsubu-an when making manju, but sometimes I can't use it all up. That's when I make zenzai using leftover tsubu-an. Sometimes I serve it without mochi. The flavor and subtle sweetness of the aduki is still very satisfying.I created this recipe based on the premise of using homemade tsubu-an, but you could of course use the store-bought variety. If the tsubu-an is unsalted, add a pinch of salt to improve its sweetness. It's also good with mochi cooked in hot water. For 2 servings. Recipe by Kamoshian cookpad.japan -

I made a stock of anko, so on occasion, I use it to make oshiruko (sweet red bean soup), ohagi, or other kinds of treats. The total simmering time for the adzuki beans to become tender varies greatly depending on how fresh they are, so check the pot from time to time. They should be simmered until they can be easily crushed between your fingers, and are plump and cooked through. While the beans are simmering, don't stir them up too much.
