Easy and Healthy Daikon Radish Soup

I wanted to use daikon radish in a soup. I usually cut it into cubes, but I tried julienning it instead, and I was surprised just how much like ramen it looked. I didn't realize how delicious it would be.

If you add a generous amount of pepper and oyster sauce, it will taste more like ramen soup.

Ingredients

  1. 250 gramsDaikon radish
  2. 700 mlWater
  3. 1Soup stock cube
  4. 1 dashSalt and pepper
  5. 1 tspOyster sauce
  6. 1 tspSoy sauce

Cooking Instructions

    Put the water in a pan. Peel the piece of daikon radish, and slice it very thinly right over the pan using a vegetable slicer or mandoline. You can just julienne the daikon radish with a knife, of course. Cut it as thinly as you would for a salad.

    Add the soup stock cube, and simmer until the daikon radish is very soft. Add the soy sauce, oyster sauce and salt and pepper to taste and serve.
