Steps

Take soybean and black chickpeas in separate bowls.

Soak in water overnight. Rinse thoroughly next day morning.

Remove the skin of soybean one by one using hand. This is necessary because the skin is hard to digest.

Boil soybean and black chickpeas in a pressure cooker till whistle blows twice. Discard the water and rinse with fresh water.

In a kadhai, switch on the burner and add oil. Add all the ingredients and allow them to flutter. Add boiled chana and soybean into hot oil and mix well. Add all the spices except amchur powder and mix gently.

Add 1/2cup water and cover with lid. When the water becomes dry, add amchur powder and switch off the burner.
Transfer the ghugni in a bowl.
Finely chop green chili, onion and sweet green mango. Also prepare beaten curd and tamarind chutney and bhujia. - 7
Transfer the ghugni into a serving bowl. Add chopped vegetables. Spread curd and tamarind chutney. Finally sprinkle bhujia on top.
Ghugni chat is ready to serve.
