Crème Brûlée with Orange Marmalade

Preheat the oven to 285°F (140°C).
Bring about 8 1/2 cups (2 liters) of water to a boil.

Heat the evaporated milk to about 120°F (50°C).
Mix the vanilla sugar with the eggs.
Gradually pour the warm milk over the eggs while stirring. - 3
Spoon some orange marmalade into the bottom of each ramekin.
Pour about 3 1/2 ounces (100 g) of the custard mixture over the marmalade in each ramekin.

Place the ramekins in a baking dish or roasting pan. Pour the boiling water into the pan around the ramekins.
Bake for 35 minutes at 285°F (140°C).

Place the ramekins on a wire rack and let them cool until warm or completely cooled, as you prefer.

Sprinkle light brown sugar on top and caramelize it with a kitchen torch.
