Ingredients

25 minutes
2 serves
  1. 5-6baby potatoes
  2. 4-5small onions
  3. 1green capsicum
  4. 1little salt
  5. Marination : 👇
  6. 1/2 cupthick or hung curds
  7. 1tb.sp ginger - garlic paste
  8. 1t.sp tandoori masala
  9. 1t.sp. Kashmiri red chilli pwd
  10. 2t.sp. coriander-cumin powder
  11. 1/2t.sp turmeric pwd
  12. 1/2t.sp garam masala
  13. 1tb.sp oil preferably mustard oil
  14. Salt to taste
  15. Other ingredients : 👇
  16. 1tb. sp.oil
  17. Coriander to garnish
  18. Lemon wedges to serve

Steps

  1. 1

    In pressure cooker take baby potatoes, onions & steam them with a little salt for 1 whistle. Cut capsicum into big pieces. When cooled, open pressure cooker & remove the vegetables & cool them. Keep aside.

    Marination : In a big bowl mix all the ingredients for marination. Grind ginger & garlic in mortar and pestle & add in the marination. Mix well.

    Add the cooled vegetables & capsicum pieces.Give it a gentle toss. Cover & keep aside for 30 minutes. OR u can keep the marinated vegetables in fridge (so curds will not turn sour) for later use ie you can marinate in the morning & make vegetable at night.

    Now heat oil in a pan, add the marinated vegetables & cook on slow flame, till done. Keep a little marination aside, for later use.

    Take the cooked veggies in a bowl, add a little marination that was kept aside & sprinkle coriander, serve with lemon wedges. Serve this fancy vegetable with naan or roti.
