In pressure cooker take baby potatoes, onions & steam them with a little salt for 1 whistle. Cut capsicum into big pieces. When cooled, open pressure cooker & remove the vegetables & cool them. Keep aside.

Marination : In a big bowl mix all the ingredients for marination. Grind ginger & garlic in mortar and pestle & add in the marination. Mix well.

Add the cooled vegetables & capsicum pieces.Give it a gentle toss. Cover & keep aside for 30 minutes. OR u can keep the marinated vegetables in fridge (so curds will not turn sour) for later use ie you can marinate in the morning & make vegetable at night.

Now heat oil in a pan, add the marinated vegetables & cook on slow flame, till done. Keep a little marination aside, for later use.

Take the cooked veggies in a bowl, add a little marination that was kept aside & sprinkle coriander, serve with lemon wedges. Serve this fancy vegetable with naan or roti.
