Parval sabzi (Pointed Gourd Sabzi)

Pointed gourd is a vegetable with a white or light green stripe in dark green color is commonly known as parval. This vine grows in a warm and humid environment. This vegetable is very healthy and is abundant in the month of May to August. Rich in vitamin A, B1, B2, vitamin C and calcium, this vegetable also contains minerals like potassium, phosphorus, magnesium. Also, being low in calories, it is helpful in keeping cholesterol levels low. Rich in fiber, this vegetable keeps digestion good. Ayurvedic treatment for years.
Here I have made simple parval sabzi with basic spices.

Here I have made simple parval sabzi with basic spices.
Steps

Wash and trim pointed gourd from both sides.Remove seeds if any. Cut into halves and make thin slices.

Pressure cook for three whistles.

Heat oil in pan. Add asafoetida and turmeric powder and add pressure cooked pointed gourds.

Also add salt, red chilli powder and cumin coriander powder. Mix well.

Now cook and sauté on slow flame till oil separates. Stir at intervals. Then turn off the heat.

Garnish with coriander and serve hot with meals.
