Peel Pointed Gourd and just slit a little on both ends. Marinade with little salt + turmeric and marinade for 15 minutes.

Assemble ingredients, make smooth paste of soaked Cashews + Poppy seeds + 3 green chilli and keep aside.
Also make a medium slurry of cumin powder + coriander powder + turmeric powder + red chilli powder and keep aside. - 3
In moderately heated pan / kadhai, add oil and allow to heat, add marinaded pointed gourd and fry under medium heat till golden brown.

Keep aside the fried Pointed Gourd.

In same pan / kadhai, add oil,allow to heat, then add all whole dry spices and sauté for few seconds.
Then add the spices slurry and cook till spices leaves oil.
Add fried pointed gourd and sauté for around 2 minutes, add water + salt + sugar and cook for around 2 minutes. - 6
Add the cashew paste along with 1 tbsp water + 1 green Chilli and cook for 2-3 minutes under medium heat as cashew paste tends to burn. Cook till rawness from cashews goes off.

Add whisked Curd, mix gently and cook further for 3-4 minutes under low to medium heat.

Simmer for around 2 minutes, keep in stand by mode for around 2 minutes and dish is done.

Enjoy the summer delicacy with great charm. Pair with Phulka/ Paratha/ steamed Rice/ Vegetable Pulao.
