Ingredients

Serves 4 servings
  • 7 oz (200 g)bittersweet baking chocolate
  • 1/3 cup (40 g)brown rice flour
  • 1 pinchflaky sea salt
  • 2 tablespoonsalmond or hazelnut butter (to replace 2 oz/60 g butter)
  • 1generous handful raw cane sugar
  • 3eggs
  • 1/2 packetinstant coffee (or 1 to 2 teaspoons or tablespoons instant coffee, depending on how much you like coffee)

    Melt the chocolate.

    In a mixing bowl, combine the flour, salt, and coffee.

  3. 3

    Beat the almond or hazelnut butter with the sugar, then add the eggs one at a time. Beat until creamy.

  4. 4

    Combine all three mixtures, stirring well with a spatula.

  5. 5

    Pour into your baking molds and bake for 10–12 minutes at 350°F (180°C).

  6. 6

    It's done when the top doesn't move when you gently shake the pan.
